Pink Lady Apple
Goat Feta Crumbles
In a large serving bowl combine1 lb baby spinach & 1 bunch of finely chopped rainbow chard. Finely slice the following ingredients and add to salad base- 1 bulb sliced fennel, 1 pink lady apple, 1 mandarin, 1 shallot. Sprinkle evenly 1 tablespoon finely grated ginger, 1cup goat feta crumbles and 1 pint blackberries. Top off with your favorite aged vinegar (I love Spectrum Naturals fig balsamic) and avocado oil. Add a pinch of cayenne and enjoy! Pairs perfectly with Grilled Salmon.
