Slow cooked rosemary beets

3.5 lbs of beets, washed and de-stemmed
¼ cup aged fig balsamic vinegar (spectrum naturals is good stuff!)
zest 1 medium grapefruit
fresh squeezed grapefruit juice
2 diced shallots
2 sprigs rosemary
fresh ground pepper
pinch of sea salt
   

Dice beets and add all ingredients to slow cooker, cook on low for 6 -8 hours until desired tenderness.
